Yes, 100% agree. Even the Mughals, who were not from Persia, brought in Persian recipes so their influence is quite visible in the cuisine of North India to this day. It's just that Sindh was usually the starting point for any Western conquest, be it Arab rulers or Alexander the Great, so a lot of influences first petered into the cuisine in Sindh and then found their way into the rest of India.
